Low Fat Apple Chicken Salad Wrap
2 cups cooked chicken (I use rotisserie from safeway and just take it off the bones)
1 celery stock
1/2 red apple
3 tbs of low fat mayo
large lettuce leaf :)
salt
pepper
garlic and onion powder
lemon juice
Dice celery, apple, and chicken and combine well with mayo in a mixing bowl. According to what taste you want add salt, pepper, garlic and onion powder. I like mine a little on the garlicy side. Finish wish a dash of lemon juice and wrap in a large lettuce leaf! Simple and delish! :)

There are two things I look forward to on Christmas when it comes to indulging. My mother’s coffee cake for breakfast and grasshopper pie for dessert. Both are tradition and both are far from being healthy. Since I attempt to eat clean most days, it seems like I always eat too much. I never learn my lesson. However, I do know how to get back on track. Here is my Post Holiday Guide.
This is my year for reinvention. Im calling it “Reinventing Rachael”. I have purged the bad from my life and I’m ready to attack the new year.
Heres the checklist:
1. Set a realistic goal for weight loss. Check! 40 lbs, 5 months.
2. kick off my weight loss with a de-bloat and cleanse
3. Cut my hair
4. clean out my closet to make room for new (smaller) clothes
5. Save $$$
6. Go on a real date. Not those fake ones M and D used to take me on.
7. Do something I never thought I would do.
8. Be happy in my own skin. There is only one me, so make the best of it!
